1 Onion, cut into wedges
2 zucchinis, sliced
2 yellow squash, sliced
1 red bell pepper, sliced
2 Tbsp olive oil
2 tsp dried Italian seasoning
Salt , Pepper and Garlic powder

- Heat oven to 400 degrees Fahrenheit
- Place chopped vegetables into a plastic bag and add the olive oil, Italian seasoning, salt, pepper and garlic powder. Seal zip lock back and shake up the mixture. This will help evenly coat all of the veggies while using the least amount of oil possible.
- Bake on a cookie sheet with parchment paper lining the bottom, or on a stone cooking sheet for 15 minutes, or until the veggies have lightly browned.
- Serve with sliced lemon
